Lamb Shank Lion’s Mane

Ingredients (for 2 people):
1 lamb shank (I am sure that everyone has a secret recipe how to make a perfect lamb shank)
1 big OR 2 medium potato for French fries
300 g of fresh cultivated(!) Lion’s Mane*
1 litre of chicken stock
Cooking instructions:
Cut the fresh Lion’s Mane fruit bodies to slices (preferably not thicker than 5-10 mm).
Cook the Lion’s Mane in the Chicken soup for 2-3 minutes, then remove the slices from the soup, place on a plate (save the juice for an another food).
Oven bake the lamb shank. Deep fry the French fries.
Serve them together!
* Please do not forget that Lion’s Mane (Hericium erinaceus) is protected in many European countries, including the UK, so do not collect it from wild habitat!
